Parmesan Crusted Chicken Sheet Pan Dinner
Parmesan Crusted Chicken Sheet Pan Dinner is one of my favorite week night go-to’s!
I don’t have a lot of time to plan dinner during the week, so sheet pan dinners can be so helpful on busy week nights. I threw this together within 45 minutes (including baking time) and the family loved it! Even our stubborn, picky 2 year old loved this parmesan crusted chicken sheet pan dinner. While I don’t typically write about food/recipes, I do write about making mom life easier – and this recipe does just that. This specific recipe feeds 2.5 people (2 adults, and a child).

Parmesan Crusted Chicken Sheet Pan Dinner Ingredients –
-2 eggs
-2 boneless skinless chicken breasts
-1 vidalia onion
-5 red potatoes
-Bag of broccoli
–Garlic and Herb seasoning (I use this one for every single chicken dish I make)
-Bread Crumbs
-Salt and Pepper
-Oil (we use canola)
Parmesan Crusted Chicken Sheet Pan Dinner Prep –
The idea of this recipe is to cook on one pan, but I don’t know how to NOT cook for an army, so I put the veggies and potatoes on one pan, and the chicken on the other pan.
The prep for this dinner is:
-Preheat oven to 375 degrees
-Butterfly chicken breast
-Chop onion
-Chop potatoes
-Prepare broccoli – whatever this means for you. I used frozen broccoli florets that are typically supposed to be microwaved, and it turned out fine. Again, I’m all about ease – not perfection!
-Make parmesan crust mixture – Add grated parmesan, bread crumbs, parsley, and Garlic and Herb seasoning to a bowl. (P.s. we use this Galic and Herb seasoning for ALL of our chicken dishes)
-Crack 2 eggs in a separate bowl, mixing yolk around/scrambling eggs
-Oil of your choice (we use canola oil) on your pan(s)
Cooking Process –
-Place chopped potatoes mixed with onions on half of one sheet
-Place broccoli mixed with onions on the other half of the same sheet you put potatoes on
-Drizzle oil over potato/broccoli/onion mix, add salt and pepper
The veggie/potatoes are ready to be cooked, but I place everything in together. Now to start on the chicken! I personally save the chicken part until last, because it can get messy!
-Dip butterflied chicken in egg, covering the whole piece of chicken
-Then, dip egg covered chicken in parmesan crust mixture
-Place parmesan crusted chicken on oiled sheet pan
-Cook at 375 for 30 minutes
*** If you like your veggies and crusted chicken crispy/ slightly browned, bump up heat to 400 degrees for 10 minutes after you have cooked for 30 minutes at 375 degrees.
